My name is Eduardo and I am a Red Seal Chef & Kitchen Manager at Red Road Recovery. I was fortunate enough to have apprenticed for 7 years in a large hotel with European and World Chefs. Following that I obtained my Red Seal Certification while apprenticing in the mountains of Jasper, AB for 3 years. During my mentorship I learned to do everything from scratch including incorporating flavours, techniques and foods from all around the world.
I have a love of nature, gardening and harvesting. I spend much time in nature to see the way things grow. Some foods I love to explore are tamarack jelly and sweet grass syrup which have amazing natural flavours and aromas. With my love of the outdoors, I have travelled to 38 of our National Parks in Canada often spending time with indigenous people and learning from many cultures. I love working and interacting with homeless, injured, handicapped, and hospitalized people. Through experiences with homeless and addicts, I was given the opportunity to work in a treatment centre where I found my purpose.
My purpose: In connection with clients, our purpose in the kitchen is to artfully and soulfully combine a very wide range of foods and cooking techniques to impart intense nutrition for client’s physical, emotional and spiritual health to travel their road of recovery.
I strive to have some world indigenous cuisine and food knowledge in our servings. It is important to me that clients experience recovery from not just the mental effects of addiction but the physical ones.
